Truther Cooking: Rice Pudding

1 can coconut milk 1 c milk 1/2 c brown rice 1 tsp cinnamon 1 tsp ginger (fresh or dried) 1/4 cup honey Put above ingredients in a pot in that order. Bring to a boil, reduce and simmer uncovered for 1 hour, stirring occasionally.

What about using already cooked white or brown rice. Like transforming left overs or speeding up the process a little.
Brown rice - regular brown rice – never cooks properly for me. I have been cooking it for over 25 years. The only brown rice that cooks well is ORGANIC Brown Rice. It always cooks perfectly and is never hard.

@gotsotruthed No, don’t worry, it didn’t sound rude, it’s a legitimate question. Mine was also still not cooked after an hour. I think next time I would use cooked rice to start.
@thetruthergirls ….Oh my, I just reread my comment. That did not sound very good. I must have sounded horribly rude. I hope that’s not the impression you got : ) Well, I cooked the pudding another hour and a half, and the rice stayed hard. I told a friend, and she said it’s possible the rice could be bad. I’ve never heard of that before, but anyway, I shouldn’t be eating rice pudding anyway!!, as I am trying to cut carbohydrates. My bad. Totally my bad. Be love, and be well, Tina.
@gotsotruthed I find it is too firm and with too much liquid after an hour. I left it on the stove on a fairly low temperature for about another 2 or 3 hours and it does turn out good after that. I got the recipe from the Internet but I don’t remember where.Just cook it longer and it will be good.
I tried the recipe, but after an hour, there was still much liquid. So, I added some egg yolks to thicken it. It worked, but when I took a bite, the rice was still hard. Not al dente, it was hard. Well, I’m going to cook it a little longer. I’m guessing another hour. You say you forgot and left it on the stove for a few hours, and it turned out fine?? I hope I can save this batch, the ingredients cost about 5 to 6 dollars. Where did you get the recipe??
ooohh hey regarding ginger, you know what my parents have been doing? Theyll take a glass of water and out a slice of ginger in it and let it stand for a few hours and then they drink it
– i dont do it, but my parents are still alive so it must be healthy lol

Thanks for the recipe – I’m going to make some right now. Good use for my Tetra Pak stash of Vita Coco that expired a year ago but still seems to be fine. I just noticed that Tetra Pak uses the “all seeing eye” logo and it’s been kosher taxed so it must be good! The AJ interlude was classic.

I was drinking a lot of milk in 1977 while in my master’s in soils/chemistry in Bozeman, Montana. Yeah, stuffed with hormones, found out the hard way, and this was from a local dairy. I didn’t get cancer, though, and finished the master’s with 3.84 gpa.

You could’ve been a bit clever with the MSM offer. You can write parodies in such a way that you leave questions in there for people to ponder. (Maybe that wouldn’t be cleared for airing of course – who knows. Could have been worth a try anyway, if it had interested you).
