Tips From the Experts in Cooking Rice, Potatoes and Pasta

The word “chef” is used to refer to any person who cooks professionally. In a professional kitchen setting, however, the word is used only for the one person in charge of everyone else in the kitchen, the executive chef. A chef is a widely respected because of his expertise and intricate abilities in the art of cooking. Here, I present you expert tips from professional chefs to be taken into consideration when cooking pasta, rice, or potatoes.

When pasta is fresh it tends to require less water than dried pasta. You need to have a large saucepan of rapidly boiling water ready—just about enough boiling water for the pasta to cook in. To prevent the pasta from sticking together, a little oil should be added to the water. After that, add pasta to the pan, making sure that the water remains boiling, while at the same time stirring for ten seconds to separate the pasta. Depending on the type of pasta you’re using, boil for two to four minutes.

Spaghetti should be untangled before serving. Sometimes, when you allow spaghetti to cool for too long, it becomes tangled. If this happens, toss it back into the hot water and stir with a large spoon. Right after that, drain and rinse the pasta in cold water. Some olive oil may be added if you see it fit.

Al dente pasta is a special type of pasta. Al dente, an Italian phrase, means “to the tooth”.
Cooked pasta should be soft but still firm when you bite it. It is said that the easiest way to determine whether pasta is “al dente” is removing a piece from the saucepan and testing it between your teeth. The ideal “al dente” pasta will have some texture when bitten, but it should not be dry and hard in the middle.

Pasta is also cooked dried. Do not fall prey to the common mistake of not having enough boiling water when cooking dried pasta. Prepare a large saucepan of rapidly boiling water. Add a little oil and pasta to the pan. To separate the pasta, stir for twenty seconds. Boiling should be for ten to fourteen minutes–depending on the shape of the pasta and the flour used. To serve hot, drain and eat immediately without any extra oil or butter. To serve cold, rinse pasta under warm water, and then rinse under cold water.

If you want perfect pasta, do not boil the noodles! Instead, boil the water and add pasta after turning off the fire. Cover the pasta, removing cover only to stir the pasta every five minutes for twenty minutes. This way, you will never have overcooked pasta, but perfect pasta every time.

Let’s now move on to rice. Here are some tips for making fluffier rice. Before adding rice, add one teaspoon of lemon juice to the water. This will not change the flavor but will plump up the grains to give you perfect rice.

Here are some tips for adding flavor to rice. Substitute plain water for chicken stock, beef stock, or tomato juice when boiling flavored rice. It may be served “as is” or more flavor may be added by sautéing some vegetables in olive oil and garlic and then adding them. This will give you a delicious and healthy side dish.

Here are some tips for reducing the stickiness of pasta and rice. Because of the starch in pasta and rice, they tend to stick together. This may be avoided by adding a splash of vinegar when boiling them. This gives you perfect, stick-free pasta and rice every time.

Here are some tips for making the fluffiest possible baked potatoes. You need to choose a potato with high starch content. Examples of good choices are Russets and Idahos. To aid steam in escaping during baking, pierce the potatoes several times with a knife before placing them in the oven. Wrapping your potatoes will cause them to steam rather than bake, so do not do this. When serving your baked potatoes, before adding toppings, cut a slit in the top and squeeze the sides of the potato.

Here are some great tips for making the skin edible when you’re baking potatoes. Before placing them into a hot oven, rub the outside of your potatoes with some vegetable oil. This will cause it to become not only soft,but delicious as well. A little added butter and sour cream, or even shredded cheese gives you a perfect side dish!

All this garlic cooked up will add a superb flavor during mashing. Add buttermilk, cream cheese, sour cream butter, or a combination of these while mashing potatoes. Sometimes we diabetics are told to stay away from rice. And we really should avoid white rice. But this recipe for Rosemary Shrimp with Rice is diabetic friendly. The recipe calls for Brown and Wild Rice and the recipe has a ratio of 20 carbs to 17 protein per serving. Rice can be a healthy grain alternative when we use the brown rice and serve it with a good protein item. Add a salad or steamed broccoli and you have a decent meal.

ROSEMARY SHRIMP WITH RICe

(Following directions below, put shrimp in frig to marinate while preparing the rice.)

1 tsp olive or canola oil

2 green onions, thinly sliced

1 1/2 tsp minced fresh rosemary

1/2 cup uncooked brown and wild rice blend

1 1/3 cups chicken broth

In a medium saucepan, over medium heat, heat the oil. Add the green onions and the rosemary. Cook, stirring, for about two minutes until fragrant. Add the rice and mix together. Add the chicken broth and bring to a boil. Reduce heat to simmer and cook 30 minutes or whatever your rice package recommends. Fluff with a fork and set aside while preparing the shrimp.

SHRIMP INSTRUCTIONS:

2 tsp olive or canola oil, divided

1 tbsp white cooking wine (or another tsp lemon juice)

1 tsp lemon juice

1 garlic clove, minced

1 tsp fresh rosemary, minced

1/2 lb med to large fresh shrimp, peeled and deveined

1/4 tsp salt

dash fresh ground black pepper

Mix one teaspoon of the oil, wine, lemon juice, garlic and rosemary together in a large plastic ziplock bag. Add the shrimp to the bag and mix well. Place in the refrigerator for 30 minutes.

Remove shrimp from bag and reserve the marinade. Heat a nonstick skillet over medium to high heat. Add the remaining oil to the skillet and swirl around to cover the bottom of the pan. Add the shrimp and sprinkle with the salt and pepper. Cook shrimp for 1 to 2 minutes. Flip shrimp to other side, add the reserved marinade and cook, stirring, for another minute or two until the shrimp are pink and opaque. Place the shrimp over the rice to serve.

Makes 4 servings with each serving approximately 20 carbs to 17 protein.

If you have never used a rice cooker, then you are missing out on one of the best kitchen appliances available. A rice cooker makes cooking rice so simplistic, you’ll wonder how you got along without it. No more glugged rice that sticks together. Your rice will come out perfectly each and every time you use it.

You will be pleasantly surprised to learn that rice cookers can cook so much more than just rice. They are a versatile little unit that can be used to cook soups, stews, desserts, cereals and even steam vegetables. However not all rice cookers can perform these functions, so if you are looking for the versatility of the rice cooker, then you will need to shop around.

There are basically two types of rice cookers. The first ones are the cookers that can perform most of the functions mentioned above, and they come with “fuzzy logic”. They have a few more gadgets and usually have a basket that you can use to steam your vegetables in. The main function is to cook rice, although you can use them for a lot more.

The second type of rice cooker is the dedicated rice cooker. These are basically a cooker/steamer type of cooker. They don’t perform the extra functions of the “fuzzy logic” cookers.

The best thing to do is to first decide what you want your rice cooker to do. If you are interested only in cooking rice, then a dedicated rice cooker is probably what you are looking for. However, if you are interested in cooking puddings, stews, soups etc then you a fuzzy logic cooker is probably your best choice. Try not to be lured into all the different functions of a fuzzy logic rice cooker, if you really only want it to cook rice. You will be spending more money on a cooker that has more functions and possibly never use any of them.

Be sure to buy a cooker that is relevant to the amount of rice you plan to cook. If you have a large family, then an 8 – 10 cup size cooker is most likely going to be what you need, rather than a smaller cooker for only 1 or 2 people.

If you are a big rice eater, then a rice cooker could be the best kitchen appliance you have ever invested in. It takes the hard work out and cooks perfect rice every single time.

This is what you need to make a Pilau Rice with Beef Stew Recipe.

1. The very best utensil for cooking fluffy, separate rice is a frying pan with a lid. Over the years I have found that the shallower the rice is spread out during cooking, the better. Buying a 10 inch (25.5 cm) pan with a lid would be a good lifetime investment for Pilau rice cooking. Failing that, try to find a large saucepan lid that will fit your normal frying pan.

The following quantities will make enough pilau rice to serve four to six people. For an aromatic, almost scented flavour, crush 2 cardamom pods, ¾ level teaspoon cumin and ½ level teaspoon coriander seeds using a pestle and mortar. Add the spices (the pods as well as the seeds of the cardamom) to a warmed frying pan and turn the heat up high to dry roast them. This will take about 1 minute and will draw the flavour out of the spices.

2. Add 1 tablespoon of groundnut oil and 1 small finely chopped onion and fry for about 3 minutes, until the onion is lightly tinged brown.

 

3. The best quality rice is basmati, which has long, thin pointed grains and the best flavour. It is more expensive than others but, since cooking is about flavour, it is the one to buy, as it does have a far superior taste. Always measure rice by volume and not by weight in a measuring jug and use 10 fl oz (275 ml) – that’s 2½ fl oz (65 ml) per person.

 

4. Add the rice to the pan. The rice doesn’t need to be washed because it is thoroughly cleaned at the milling stage and washing it removes some of the nutrients (anyway the high temperature of the cooking will purify it). Turn the grains over until they are nicely coated and glistening with oil. This helps to keep the grains separate.

 

5. Then add the boiling water to the pan – the quantity of liquid you will need is exactly double the volume of rice, so 10 fl oz (275 ml) needs 1 pint (570 ml) of boiling water or stock. Stock is an excellent alternative, particularly if the rice is to be served with chicken (use chicken stock) or beef (use beef stock), and for fish a fish stock is particularly good. I don’t recommend stock cubes, as I find them too strong, masking the delicate flavour of the rice. You also need to add a 1 inch (2.5 cm) piece of cinnamon stick, a bay leaf and a good seasoning of salt (about 1 level teaspoon to every 5 fl oz/150 ml of rice). Once the hot liquid has been added, stir only once as you don’t want to break the delicate grains – this releases the starch and gives sticky rice, spoiling it utterly. Because people get nervous and anxious, or because they just have a habit of stirring things, this causes the fatal flaw.

 

6. Put the lid on and turn the heat down to its lowest setting. Then leave it alone – once the lid is on, set the timer and go away! If you lift the lid and let the steam out you can slow down the cooking process, and rice should always be cooked as briefly as possible. Give white rice 15 minutes and brown rice 40 minutes and use a timer – overcooking will spoil it. The best way to test if it is cooked is simply to bite a grain. Another way is to tilt the pan and, if liquid collects at the edge, it will need a couple more minutes.

 

7. When the rice is cooked, remove the lid, turn the heat off and place a clean tea cloth over the pan for 5-10 minutes. This will absorb the steam and help keep the grains dry and separate. Just before serving, use the tip of a skewer or a fork to lightly fluff up the grains

 

 

 

 

BEEF STEW INGREDIENTS :

 

1 lb. beef [not ground] i.e. Cut meat

2 carrots

2 green peppers

4 tomatoes

4 onions

Coriander

Curry powder

Black pepper

Seasoning salt, Crisco cooking oil, salt

 

 

METHOD

 

Fry the onions that have been chopped until they turn brown. Add tomatoes and chopped green pepper. Add carrots, black pepper and coriander. Wash the cut meat and sprinkle it with seasoning salt.

When the carrots have become slightly soft add the cut meat. When meat is almost cooking add some curry powder and salt to taste

 

 

PILAU RICE INGREDIENTS :

 

1.5 LB rice (water according to rice)’

0.5 LB green peas

2 cans pilau masala (type of spice)

3 onions

3 tomatoes

Crisco oil

Salt

METHOD

 

Wash the rice with cold water. Boil the peas until cooked. Chop onions and then fry them until they turn slightly brown.

Then add tomatoes that have been peeled and cut. Boil some of the rice water with the pilau masala until it boils. Add some salt to taste.

Add the rest of the water to the fried onions and tomatoes. Then add the green peas when the water starts boiling and the rice. Then let it cook.
